OOO! I forgot about this one, and it's hubby's FAVORITE!
In your frozen food section, where the pies etc are, you'll find phyllo cups. Buy 2 packs of those. 2 bags fresh spinach Bunch of fresh dill chopped Bunch of fresh parsley chopped Finely chopped small onion 2 cups crumbled Feta 2 tbsp Olive oil Cook the spinach, dill, parsley, onion together until spinach is fully wilted and cooked 'down'. Drain very well. Add Feta Cheese. Stuff the little cups with the filling, bake for 15 minutes on 350 degrees. VERY easy to make spanikopita. |
