actually in my experience iguana is very tender and sweet. however, too damn many teeny tiny little lizard bones make it not worth the trouble for the little
scrap you might get from even a giant iguana.

I watched Andrew Zimmerman eat it on his show, iguana, and he did not even like it. He eats all kinds of nasty crap.
It was sad the poor igauan was up a tree and they caught it and cooked it and it tasted like crap, what a waste of a poor little animal. |

When I was in San Salvador and Honduras, some of the villages only ate what they could grow or could catch. Hence, roast iguana.
I'm in the dark over what you are REALLY saying. Guess I should have watched more TV?? or at least paid attention. |
