Have lunch at the Market - that'll be a good cultural experience for her. Do the Needle - but don't waste your money on the food (unless she insists). If you have the time, take her up to Paradise at Mt Rainier and walk some of the paths and hang out with the marmots. I bet she'd enjoy a walk around Green Lake. If she's game, rent some skates. Take her out to Golden Gardens in the evening and walk barefoot in the Sound. You can have dinner at Ray's Boathouse.
