He is the chef du jour in Atlanta right now, very well respected and sought out. And yes, he is married and just as nice as he appears. He is enormously talented and worthy of being Top Chef. I know nothing of the backgrounds of the others and they could be just as talented and worthy. I hope so. It will make for a much better competition.

I think he took over One Midtown Kitchen after Shaun left too, didn't he? I remember reading before this season started thet the competitors were on a higher plane than past seasons. It seems well known talent is applying since the show is respected in the food world and not written off as a joke.

It's very basic - and it uses a brown sugar and mustard rub that works on any number of things (I use brown sugar, dijon mustard, and fresh ginger as a glaze for broiled salmon). I don't remember seeing many recipes for a 12-14 hour braise. Maybe that's the secret: he just braised the hell out of it. And it's grilled "aggressively" (whatever that means) first, so there's a nice hint of char on it when it braises. Many recipes for braised meats call for them to be seared or browned first, but I don't recall seeing any that are grilled first. Maybe that Cajun rub and pre-grilling does the trick? It's certainly a different recipe from what you'll see if you Google "braised brisket" recipes. But overall, I think it was a brilliant use of time for Richard to think of using a recipe that calls for a 12-14 hour braise. Think of how many times a chef in previous seasons tried to braise something, only to screw it up because they didn't have enough time? This was the one challenge where they had 16 hours of time to cook! Richard turned the challenge of an all-nighter into a positive: the chance to do a long braise. And you don't have to watch something braise. He could go on to other things.

Posts: 347 (05/08/08 9:45 PM) Reply Quote More Recent Posts Message Connection Block Invite	goat, I totally agree with you on the brisket thing. but that is so basic. you rub it down ( yes with brown sugar, paprika, garlic salt, pepper, sea salt and a little morton salt, , liquid smoke, ketchup and mustard and if you need more liquid, coke or beer), and if you don't have a smoker, you throw it in the oven for 12 hours. low heat over night. I cook my turkey the same way. I'm wondering if the sea bass might have been better. that's a pretty basic sauce recipe too. but have you read his recipe? it's pretty confusing. spike cooked his tomatoes 4 hours in the oven on 250? I'm sure I could work it out once I started cooking it. if the groom team had won, would spike have been the winner? richard cooked a brisket, which in my neck of the world is an every weekend thing. stephanie pulled a gourgeous wedding cake out of her ass in the same amount of time. lisa made a better cake. have stephanie and lisa worked together yet? my opinion -- richard is an a-tier, top chef. andrew, I love him dearly, but he is such a wild card. dale & lisa still have a lot to show me, but I don't want either one of them to leave. spike & antonia are "niche" chefs. I think they will soon be picked off one by one.

He took the more difficult client and pleased the guests. They preferred the other cake to Stephanie's, didn't love Andrew's dishes, and I suppose Antonia's dishes weren't the centerpiece though good. Especially compared to Team Leaderless.

You expect a certain level of decorum and attire. I'm fine with all of them wearing their chef's coats as they serve, but did he really have to wear his dopey Justin Timberlake wannabe hat that he bought at Journeys or Hot Topic of one of those other whitetrash mallrat places? I too didn't care for him in the begining, kinda arrogant etc...but as time goes on, I REALLY like him! He stays totally cool under pressure and is not prone to the hissy fits like Dale. I can totally see him as the winner. Tonight he proved to be humble and a class act. Stephanies cake may not have "tasted" the best, but it totally looked like a REAL wedding cake. Very hard to pull off in 12 hours. She another one who seems to remain "cool" under pressure. Thier Team just gelled together, Richard step up to the leader's role and took charge. Andrew, Andrew, Andrew....god love him, he is truely the poster boy for ritalin! Creamed spinach....EWWW just EWWW Nikki...what a hack. She has her own resturant? what she comes up with the menu and someone else cooks? Seriuosly, GOOD itallian isn't that hard to make. Twice now, she's made "homemade" pasta that sucked. It's eggs and flour, my grandad could cook the pants off her. She fucked up PIZZA for chrissake. "I'm Itallian, I've got it covered" blah balh blah. STEP UP and be a leader. Notice how every time she cooked Itallian she fucked up? Maybe I should send her my lasagna reciepe!! She totally lucked out last week with the Roasted chicken...ONE of the EASIEST meals to make. seriuosly. Jen should not have gone home...Nikki should have been let go long ago!! Dale has talent but can't handle pressure and isn't much of a team player. True he did extra work but as someone pointed out, ONLY because he thinks ONLY he can do it right! Step up and be a leader don't get so pissy etc...

He cracked me up in the last epi, talking about how he was getting emotional in that challenge -- while being even tempered the whole time! And his giving the prize to Stephanie was very gallant. I think he did recognize that he could have never made a wedding cake -- and she had never really done one before. She just worked it out with the talent she had rather than with the experience. Anyway, here's my take: Richard is really shining. Stephanie has some solid skills and has a nice understated manner. She knows how to cook good food with good presentation. Andrew is a spazz, and he should have told Richard to "back off" from seasoning the spinach. Andrew is OK. Antonia is solid and knows how to keep her cool most of the time. Lisa is a jerk. Spike is a jerk. Dale is a major jerk. I don't care if any of these three can cook (Dale is the best of these three.) I would HATE to be in a kitchen with them.

Dale's outburst and the apparent sabatouge next week from Spike seals their fait. Richard who is clearly one of the best cooks there is (to me) getting that CJ edit. He'll be blindsided by an elimination Andrew while good, is going down hill a little and has been noted as being very outspoken. Lisa/Antonia/Stephanie will more than likely be the Final 3 with Antonia or Stephanie taking it. We've gotten more of Antonia's personality while we got more of Stephanie's culinary ability.

I'm thinking Dale/Richard/Stephanie with Dale in third place. I don't know who would win between Richard and Stephanie but at this point I'd have to say Richard. I'd like for a woman to win, but like mrsbennet said, it'd be a shame for them to pick a woman just to pick a woman instead of picking the best chef. I'll be curious to see how the rest of the season goes for Stephanie and Richard.
