...does this mean they cannot get sick during that week, since they have immunity? How does Mark Burnett insure that nobody gets sick? I don't get how this
works

Yes that is why eliza got sick after the faves lost the previous Immunity challenge.

Burnett can't ensure no one get sick. If someone becomes sick to the point of being a liability to their tribe, the rest of the tribe will vote them out.
If they can't continue playing the game, they can choose to quit the game. And "immunity" in Survivor means that you can't be voted out that
night. It has no effect on anything else.
